Healthy meals to whip up in your serviced apartment

While January 2021 may not be the great time to join a gym or deny yourself the finer things in life, we could all do with cutting down and focusing more on our health and there is no time like the present. If you are lucky enough to be working from home, or using one of our serviced apartments in Liverpool as your base this January, you have plenty of space and opportunity to try some new healthy recipes. Breakfast

Start your day like a king with our recipe for delicious gluten-free banana pancakes. With just four ingredients and no flour involved, you can make this quick and easy dish in less than ten minutes! Load your pancakes up with whatever healthy and filling toppings you like, including plenty of berries, fruit or a small helping of chocolate or nut spread if you have a sweet tooth.

If you prefer a savoury breakfast to start your day, give our vegan fry-up a go. So many people are trying Veganuary this year and we want to prove that meat-free does not mean flavour free. Fill up with tasty vegan sausages, some fried mushrooms and spice things up with a delicious potato rosti. You can put your own spin on it and make your breakfast as big or as small as you like.

Lunch

For a quick and simple lunch idea, with ingredients you can find in the local shop, give our Huevos Rancheros a go. We really like the vegan version with tofu but if you need some more protein, add eggs instead. This Mexican inspired dish is essentially eggs or tofu & wraps with a little spice and a lot of flavour added. You can cook and eat this gorgeous dish within 20-minutes, giving you plenty of time for a quick walk within lunch hour.

If you like to make lunch your main meal, go all out and treat yourself to a filling & sumptuous steak sandwich. Our recipe includes flat cap mushrooms and garlic & chive butter but if you’re watching calories you can tweak the butter for a healthier version or leave it out. Make sure you use high-quality striploin steaks and replace the bread for a crisp green salad to keep calories low & flavour high. This quick and easy lunch takes just 10-minutes to prepare.

Dinner

During the cold winter months, no one wants to eat rabbit food. Warming stews, curries and hearty pasta dishes should be top priority, keeping portion sizes controlled and incorporating low-fat versions of ingredients. Try our homemade chicken korma as a replacement for a takeaway Indian, who use an unbelievable amount of ghee (clarified butter) and oil in their dishes. Our Korma is quick, flavourful, warming and ideal for wintery nights. Make sure to use light coconut cream and Greek yogurt to keep calories low.

A family favourite and a perfect recipe for batch cooking, make sure you always have a portion of spaghetti bolognese on the menu. While it may not be made the traditional Italian way, bolognese as we know it has a distinctly British twist especially when it includes streaky bacon and lots of tasty cheese. This recipe takes 30 minutes and is so simple, it’s perfect for cooking with kids. Change the Spaghetti for courgetti and use very lean beef to keep things healthy.
